Pair cheese with fruit for an elegant dessert that is sure to please any party or dinner guest.

Ingredients

  • ½ cup finely chopped dried apricots
  • ⅓ cup apricot preserves
  • ⅓ cup dried cranberries
  • 3 tablespoons water
  • 1 to 2 teaspoons balsamic vinegar
  • 1 teaspoon peeled and grated fresh ginger
  • ¼ cup chopped walnuts
  • 1 round (8 ounces) Brie cheese

Directions

Preheat oven to 350°F. Combine apricots, preserves, cranberries, water, balsamic vinegar, and ginger in a small saucepan over low heat. Cook about 4 minutes or until the mixture begins to simmer. Remove from heat, stir, and cover with lid. Allow to stand another 4 minutes. Stir in walnuts. Place Brie in an ovenproof dish. Spoon fruit mixture over cheese. Bake 10 to 12 minutes or until interior of cheese is soft. Serve with crackers or wafer cookies.
