Collaborating with the Oklahoma State University Environmental Science Program

In the 2024–2025 school year, Midwest Dairy partnered with Oklahoma State University (OSU) to offer a unique capstone opportunity centered on dairy sustainability. Led by Dr. Karen Hickman, Director of OSU’s Environmental Science program, the project aligned with Midwest Dairy’s mission to engage future environmental leaders in real-world agricultural challenges.

Two senior environmental science students, Gabrielle Rauker and David Hughes, selected the project for their final-year capstone experience. Their journey began in Fall 2024 with their first-ever visit to a dairy farm, a hands-on introduction to the people, processes, and challenges involved in sustainable dairy farming.

Their project developed actionable recommendations for sustainable waste management solutions tailored to the specific needs of the dairy farm. Working with Midwest Dairy and guided by coursework, the students produced a comprehensive “good, better, best” framework of environmentally conscious strategies.

In May 2025, Rauker and Hughes presented their findings to classmates, faculty, and the partnering dairy farm, along with submitting a detailed written report. Their work showcased their academic achievements while contributing meaningful insights to the farm’s ongoing sustainability efforts. Later that month, both students proudly graduated with environmental science degrees, capping off a year of growth, collaboration, and impactful learning.

This partnership bridges classroom learning with on-farm experiences, inspiring the next generation of environmental professionals to explore the role dairy plays in a sustainable food system. By supporting student-led innovation, Midwest Dairy continues to promote dairy’s place in environmental science and build connections that support the future of both the planet and the dairy industry.
