Emerging nutrition leaders discover the real story of dairy farming

Midwest Dairy partnered with three University of Minnesota dietetic internship programs to create a new learning experience focused on sustainability and food systems. The combined cohort of 33 interns came from the University’s Public Health Graduate Program, Department of Food Science and Nutrition Dietetic Internship Program, and the VA Internship Program.

This collaboration was designed to meet students’ new certification requirements while showing how dairy farmers care for animals, the land, and their communities. The goal: demonstrate dairy’s role in a sustainable food system and reinforce it as a nutrient-rich food that supports health and wellness.

Preparing to Learn

Before visiting Krause Holsteins, interns completed two pre-tour assignments:

  • A Dairy Sustainability Module adapted from materials developed by University of Minnesota faculty.
  • An “open book” quiz exploring resources from the USDA, Dairy Conservation Navigator, and U.S. Dairy websites.

Interns also submitted questions ahead of time to discuss during the visit.

On-Farm Experience

During the tour, interns explored topics like animal care, cow nutrition, food safety, antibiotic use, and sustainable farming practices. They asked thoughtful questions and saw firsthand how dairy farmers care for their herds and the environment. On the bus ride back, they reflected on what they learned and discussed key takeaways with Midwest Dairy staff.

Attitudes Shifted in a Big Way

Survey results showed strong, positive changes in how participants view dairy farming:

  • Belief in dairy’s environmental responsibility rose from 30% pre-tour to 94% post-tour.
  • Confidence in dairy farmers’ animal care increased from 33% to 90%.

Interns’ written reflections reinforced this shift:

  • “I will be more likely to recommend dairy products as a sustainable and healthy choice.”
  • “I intend to correct misconceptions regarding dairy.”
  • “Dairy farming promotes environmental health while providing nutrient-dense, affordable products.”

Building Long-Term Trust

By offering hands-on, science-based learning experiences, Midwest Dairy is equipping future dietitians and health professionals to share accurate, firsthand knowledge about dairy farming. These experiences help shape informed advocates who can build trust in dairy’s sustainability story for years to come.
